WHY THE PASSION?Reflecting back on my childhood, I remember spending a lot of time in the kitchen. I enjoyed shadowing all of the great cooks I was surrounded by and yearned to learn their expertise and favorite "how- tos." Among all, I spent the most time in the kitchen with my Jamaican mother. I'd observe and take tons of mental notes as she prepared classic Jamaican dishes such Oxtail, Jerk Chicken, Ackee & Saltfish, Rice & Peas and Escovitch Fish as well. Sunday dinner was a BIG DEAL in my home growing up. In fact,
Jamaican Sunday Dinner is very serious business and is a quintessential part of Jamaican culture, that began on the plantation. It is said that this tradition was inherited from the British plantation owners who would prepare a large feasts on Sundays. She'd often prepare many traditional American dishes that she was introduced to; of course with an added West- Indian twist, but very rarely on Sundays, as these were weeknight meals. The kitchen was the pillar of our bonding time. My mother taught me how to enjoy cooking by watching the love she poured into every single meal she prepared. As I've aged my mother has passed the torch down to me and shared many of her favorite recipes that I've now hand the opportunity to add my own creative touch to. For so many years my close friends and family have begged me to share my talent with others and I'm just so grateful that I can do now. Cooking has always been a passion of mine. Creating in the kitchen and having the opportunity to share it with others brings me an unmatched level of black girl joy. |
